Thankfulness Challenge day 2 and 3

Ok, I missed writing yesterday caught up in creating little paper flowers for my Etsy shop! We are all snowed in here at home and probably will be for several more days. So today I get to write 6 things I am thankful for and 2 things I like about myself.

Things I am thankful for

1. A back that is healthy and  works for shoveling snow; granted I only worked for 20 minutes or so to give the guys a breather.

2. The pellet burner in our house. It has the ability to heat almost the whole upstairs and the cave of a living room on one bag of pellets for 12 hours. It provides a lovely glow and warmth to the room. It came with the house and for many years (due to asthma) we did not run it, but the asthma has diminished so we can once again run the burner.

3. Dogs! Our dogs that bark to remind us that it is time to get up and to care for others.

4. Two daughters! :0) They are wonderful people, talented and caring individuals. As beautiful inside as they are on the outside. Not perfect but awesome anyway.

5. Two sons, that work hard and keep us laughing!

6. Work! We have done the without work thing. No matter what the job, a regular paycheck is a wonderful thing.

That retaining wall is hip high. This should give you an idea of how deep the drifts are.

Done, whew I can now mark this off my list!

Now two things I like about myself.

1. I am good with color. What does that mean? Well, I have been known to buy items of clothing from one store one year and then get something that matches at a completely different store without trying to!

2. I am a pretty decent from scratch cook and I have taught my kids to cook from scratch. They can follow a recipe and create everything from pizza to cake to homemade bread. The biggest part of this is that they are not afraid to try! This also means that we have eaten some interesting dinners from time to time. lol

Thankfulness challenge

A friend made posting on her facebook to post 1 thing you like about yourself and three things that you are thankful for ev everyday in February! I am going to give this a shot here on my blog!

The three things that I am thankful for are going to be easier than posting one thing I like about myself everyday but I will try. You have to understand that as I write these Oklahoma is in blizzard conditions and we are probably getting more snow than we have had in decades.

7:30 am at our house

Three things that I am thankful for (these are not any special order.) Just completely random things that I think of as I sit here watching a record breaking snowfall in Tulsa OK.

1. I am thankful for my Husband. He is an awesome man that has agreed to share my life and put up with my weirdness. For that he deserves a gold medal, he will have to settle for a mother in law that constantly reminds her daughter how blessed she is and to be a blessing to him not a burden!  That would be me and my mom. :0)

2. I am thankful for electrical power.  It is providing heat, music, light, computer access and so much in our lives today.

3. I am thankful for feet. Specifically I am thankful for feet that hurt, cause me problems and the arthritis that they have. The alternative is just not something that I want to think about. :0) So, yes I am thankful for them as bad as they are. They still carry me around, wiggle, and wear socks. Ok, that is really basic. I am not going to be deep and philosophical today. The basics are just really basic and so many people do without.

Now this is harder!

The one thing that I like about myself. This is really hard to write without sounding egotistical or prideful. I wish I could say something profound and humble at the same time. I think I will have to settle and write something that sounds prideful but isn’t meant that way.  I can read really, really fast. I am slower now than I was because I try to slow down and enjoy reading more. It is handy for reading over kid’s work.  There it is done, maybe tomorrow will be easier.

Time flies!

Hi, all I must apologize for not writing anything sooner. I have not been feeling well and there was a bunch of things that fell by the wayside and this blog was one of them.

I lost about a week to migraines. I am doing much better now and I will say this. I am thrilled that I made all of the freezer meals, what a great help it was to have some dinners completed. It has been working out great and the meals are good too! The only problem has been quantity, it appears that we are eating every bit of it. There is not anything left over for lunches. This is a good problem to have.

Organizing #3:Freezer cooking

I have to be the first to say that plans change. Our plan of cooking with my mom on Friday has gone by the wayside. She has too much going on. So I started assembling the meals yesterday and put hers in smaller freezer storage bags since most of her meals are single or double serving size. I also added to our meals as the servings were for a family of 4 and we are a family of 6. Originally I was going to just have the meals for the times the kids were working! As if they weren’t going to come home hungry anyway.

I have roughly 12 meals of it finished and will finish up the rest today.  Just some pork and turkey meals today. I got a little distracted and didn’t follow the recipes precisely, I am hoping that this is not going to be a problem. I will take a few pictures when I am completely finished with all of the meals.

The cost of the food came in about $305 for 20+ meals or about $15 per meal about $2 per person.I am the first to admit that I am not a very good coupon or bargain shopper.  The other part to this is that one of us is allergic to cod and I had to buy a more expensive fish for a couple of the meals.  I believe that my savings will kick in when I am not running to the store for anything more than produce and milk, which will save gas, time and money. I bought more chicken and fish than needed for the menu plan and also had some pinto beans and ham cooked that needed to be bagged up and put in the freezer.  If this system works out, it will reduce our overall grocery costs and we will be less tempted to eat out or use frozen dinners.

This feels a bit like a huge gamble as the recipes are not our family favorites adapted for freezer cooking. On the good side the kids were very interested in the meals and thought that they looked good. They are teens, everything that looks like food  looks good, except maybe leftovers! We will see what happens when meal times arrive.

I spent a large portion of yesterday chopping vegetables and prepping the ingredients for the meals. The recipes are arranged according to meat; beef meals, chicken meals, fish meals, pork meals, turkey meals and vegetable soup.  I have the beef, chicken and fish meals completed and in the freezer.  Today is busy but I need to get these completed so that the meat doesn’t spoil and I loose all of the savings.
